I'm running a 15x6 wheel with a 29mm offset and 195-50s and I have less than an inch of clearance between the inside of my tire and the strut housing. If you go with a 15x7 wheel, I don't think there is any way you could get away with an offset lower than 30mm or so without rubbing, unless you run a spacer. You need a lot of offset to run a tire/wheel combo that big. Good luck.
