One factor you didn't mention is the question of progressive vs. linear rate springs. Personally, I think that progressives are the way to go on the street. I have Eibachs with Bilstein Sports, and the car is about as low as I would want it for the street.
I believe you can set up coilovers for progressive rate, which would probably be the best option, but for the cost. If you cut the stock springs, you'll get increased rate, but no progression. One other possibility - there was an article in European Car (last month I think) about springs and such that mentioned progressive bump stops that are now used by manufacturers to create a progressive suspension travel with linear rate springs. That might be something you want to play with if you cut the stock springs.
