If the stiffness/no recentering problem occurred immediately after you installed the shocks, it may be that you left the crucial flat washer out between the upper spring carrier and the top strut bearing on one or both sides. If you do this, the spring carrier binds against portions of the strut bearing, and the car will be very hard to steer and won't return to center. I'd prefer not to say how come I know this...
