I found a new one in my box o' spares.
Are these pre-set to some specific RPM figure?
Or can you adjust them? I have never played with one before and any guidance would be appreciated :)

I don't think that they are adjustable and I think that cut out is 6 or 7 k. Porsche uses the same rotor, but I sure wouldn't want to depend on a rev limiting rotor to prevent moto-shrapnel, IMHO. BTW, rev limiting rotors are also "sneaky" sources of odd engine cut outs, so keep a spare in the glovebox.

I have never used one as they cause very strange problems I'm sure someone has the part # for a non rev limiting rotor
