It appears that your two temp gauges are reading from two different locations. What you should also do is check that both sensors are the correct ones and properly grounded.

For most people with 71C thermostats, the dash gauge should be reading at about the 3 o'clock position. That's assuming that everything is working correctly and you moving, not stationary.
