I have done it both ways - either push the big bolts up into the car while supporting the subframe, or dropping the subframe while the big bolts stay put.
I think dropping the subframe down is probably less scary if you find the big bolts are stuck really tight on their knurls (on the body side). When lowering, the trick is to keep the subframe from tilting, 'cuz it will bind up on the big bolts & not drop. Lower it evenly and you should be able to get it clear of the big bolts to where you can get the mounts out.
Can you post a picture of the urethane parts? I've seen different ways of making those, and they work well for a street car. I've got a new pair of welded solid ones & I will try to shoot a picture of them. Welded is not OK for street use.

As long as everything cooperates and comes apart easily, it shouldn't take more than an hour or so at a leisurely pace. However, the big bolts have to be pounded UP from the bottom, not down from the top. Make sure you support the body and the rear subframe while you're doing this.
Maybe i'm saying it wrong. I don't mean the ones in the trailing arms. I mean the BIG ones, one on each side, that you need to access via inside of the car. As far as i can tell, i should be able to jack up the subframe, undo a couple bolts and pound them down from up top?
