I just picked up my 328 a couple days ago, so I'm still figuring it out too, but it seems the the center temp control (the wheel) is independent of the climate control temp setting. Be sure the recirculation control is set to either off or auto, not forced recirculation.

Why do you want the climate control off? Just turn off the compressor and you'll just be getting fresh air at whatever temp you set (down to ambient outside temp).
