Split fold down seats are an option. By default, the car does not come with fold down rear seats. Even with the seats folded down, I don't know if you'll be able to fit a mountain bike...these things have pretty darn small trunks.
As for the front arm rest, you can buy the part for under $200 IIRC. The dealer will probably charge 2-3 hours for installation, or you can do it yourself (probably in less time).
