Power assisted disk braking systems on today’s cars are all powerful enough to stop the car as quickly as tire traction will permit. For example: if you press hard enough on the brake pedal you will skid.
A low quality braking system will be mushy and unpredictable at best. A good braking system will include larger rotors/calipers/pads, steel or kelvar brake lines, and high quality brake fluid. These items and others will enhance the driver’s ability to control the braking forces more precisely.
Also, not all ABS systems are created equal. If ABS is being activated, then good ABS systems (like BMWs) out perform poor systems.
In a nutshell: The M5 and other BMWs have high quality braking systems, which are very precise. These precise braking systems allow drivers to brake in way that utilizes every possible bit of traction out of the tires. Lesser braking systems to not use the available traction as well.
