Here is the verbage from the BMW TIS Service CD.

"Section 52 26 390 Removing and installing/replacing rear head restraints

Move head restraint up as far as possible.
Forcefully pull out head restraint or detach by hitting firmily on one side from below.
(the headrest is separate from the posts. jb)

Pull out guide rods by twisting them back and forth.
(turn the rods about a quarter turn and pull up. jb)
CAUTION !
Do not damage rear window.

Installation:
Notches on guide rods must point in direction of catch spring."

From looking at the pictures of what's behind the panels and seat backs there is a whole lot more stuff that may be the source of the rattle. You may end up having to remove seats and side panels to locate.
