I have a real problem with your statement that the head was torqued to spec and in the right sequence...can/did you physically confirm that? I torqued bolts for 30 years on many mechanical conveyances and on bikes from 73 to 75 as a way to pay my way thru college. In those days, aluminun cylinder heads and iron cylinders were common on bikes and...trust me...to strip the threads on an iron block you have to go WAY over the torque specs. Indeed, the aluminum cylinder head will probably warp before the iron block's threads strip.
The same thing will happen during a severe overheat: the head will warp -enough to get the gaskets to fail- but this warping will NEVER be enough to strip the threads on the iron block. but.
My theory is that the bolts were WAY overtorqued, if that can be proven (doubtful now that the whole thing is apart) the guy who did the work is at fault. Bummer.
As to the inserts -Helicoils- well...yeah, they work but, the real fix is to rethread.
Good luck, keep us posted
