Have both of your fans checked ( the belt driven one with the temp sensor clutch, and the electrical one)

It is also possible that the guage cluster is not functioning as it should. I "understand" there is software that tends to keep the guage at the centre point unless the temp goes "outside" the normal range. It is possible that yours is not being controlled by the "dampening" program - but I doubt this is the problem.
