I personally hit the rev limiter (155) and confirmed it via my GPS unit. It's no fairy tale and I didn't see a speedy unicorn - though I did catch a glimpse of a my own.

Regarding aerodymanics, you are spot on. My 540 got more than a bit light starting at 130-140 and was scary at the rev limiter. I only stayed with it because it was a perfectly straight road, no traffic, no wind, and clear skies.

However, the M5 has significantly better aerodynamics than the 540 (the E36 M3 may as well), so I'd think these cars would be much more stable at very high speeds.

Even the M5 at over 160 is still a risk that little tiny spoiler at the trunk lid will not help much and all the car has is that front spoiler. I'm sure with the proper aurodynamics and DINAN chip this car could come very close to 200 mph but not with the stock garbage it has.
