It could be your fuel injection system and how it governs your fuel/air ratio. If your system was the L-Jetronic with the Ox Sensor, I'd say your O2 sensor is goofy, but your system doesn't have one.

I suggest considering an upgrade to the L-Jetronic system found in the '79-'81 528i, but it's a bit expensive, or at least time consuming.
