Hi :-)
it can be anything following because i had the same problem on a former E21 323i (LHD) and i checked all the following things before i made sure it was the right answer to my problem (like checking at every step).
Could be :
* checking the whole electric wire attachment to the groung (car body) for bad welding or corrosion.
* checking the alternator for the right power output.
* replacing the coolant sending unit (cheap)
* checking with an additional gauge that you just connect to the sending unit with an electric wire(such as the gauges i have on my dash now)
or :
* replacing the original gauge on the dash (expensive) which i didn't have to do to solve my problem, but it is still a possibility.
I'll tell you more about it when i am in HK.
