Ray, with a car this old, condition is utterly critical. If you really want an E21, find the cleanest, neatest, best kept one you possibly can. Make sure the interior is in reasonable condition because the plastic panels in the dash are expensive to replace. Some of the upholstery is no longer available or it costs a fortune to import from Germany. If the car has rust, don't waste your time on it - life is too short and precious to try fixing rust. All mechanical things can be fixed on the E21 320s, but what is your patience and money threshold?
You asked about sunroofs: 20 year-old car, horizontal hole in the roof - how likely is it that this thing leaks?
Good luck, and shop carefully.
