I would have to replace the trunk floor if I wanted to do the dual exhaust, right? If I was only doing the modification for a cleaner euro bumper install then changing the trunk floor wouldn't be neccesary, or would it?

If you are replacing the taillight panel you should replace the trunkfloor as the US floor is cut back further. The Euro panel is different below the bumper.
