Some folks have successfuly painted their grilles, mirrors and other hard black trim. I think SEM makes a good paint for this. The bumper rubber and side molding trim is usually treated with forever black, black again or other juice, but I have seen a silver 7 with the door moldings painted car color (including the chrome strip.) It looked good. As for the Window channel gaskets, Maximillian has good knowledge and prices. The part numbers are:

51-32-1-921-459/60 Front Left and Right $36 list

51-34-1-921-513/4 Rear Left and Right $39 list (last year)

As for undercoating, any auto body supply store should be able to get you an excellent product from 3M or some other name manufacturer.
