Welcome to the club. 733's are great cars, but are known to have common problems. One of which, is what yer' going through now. The Interior A/C and Heating bit. That is of course the Push-Button / Thumbwheel unit. These were badly designed fro the start. That's not to say they're a lost cause, because they're not. with a little finesse and alot of patience, you can solve your Heating / Vent and A/C problem.
Regarding the Engine Temp Gauge, I have the exact same problem with mine. I haven't dug into it just yet, but one thing that the people here are pointing me to is.. "Bad SI Batteries" onthe Gauge Control Boards. This too is a common problem.
First off, I would recommend that you remove your Instrument Clusters and carefully take it apart. Inspect the Batteries in the back of it and look for leakage or corrosion. This too seems to be pretty common on our cars.
