This morning I turned the key on and waited till the vacuum pump stopped to attempt starting. She fired right up (had been sitting for >1 week). Didn't get a chance to test the temp sensor yet though. Although maybe if I just pretend I'm starting a diesel I won't have to worry about it at all!

I would start at your cold start sensor
and sending unit,
then also install the vapor repair on your
fuel system shown on hotsart problem on site below. This is not just a hotsart problem.

The Center sensor with the brown plug,
when engine is cold and you start the engine
it shoud show voltage for 7 second,
now do same test when engine is at normal temp.
should show no voltage, but still could be a
faulty cold start valve.

Also you could have a vacuum leak, thus ones sitting for a while trying to recoop.
Try this turn key to Accs. for 5min before starting, then start.
