Of the two options, plus a third (parting and selling parts), I would probably just sell it intact and be done with it.

1) parting and shipping parts is a nightmare. Everybody wants small parts, and you end up with the same huge problem... getting rid of the major salvage. The engine is a 3.3 (not a large call) and the best way to move it is in the rolling body.

2) If you buy another, with whatever experience you got from this one, you will probably buy one that needs as little work as possible, unless you are an inveterate DIYer.

3) These cars are still available, in large numbers, in all states of repair or excellent condition, for very low prices, considering the driving value you get out of them.

4) How much is your time (for disassembly) worth and for how long do you want to be dodging these parts, while you work on other cars.

I have had the good fortune to have a 733 that has given me NO problems (except HVAC), but if I had to do much to keep it on the road, I wouldn't. I would simply look for a nice replacement 7 series. I'd sell it intact.
