Despite your articulately phrased "calling bullshit" on the proposition that Ebay can reflect market value, I believe that it does. Having recently sold my M6 on Ebay, it facilitates the sale of a car in a "niche market" because the relatively few people interested in the vehicle across the country have the opportunity to bid on it. I believe this presents an opportunity to discover the true value of the vehicle.

As for your observation that it is difficult to determine the condition of the vehicle in another part of the country, you are correct. However, this is not a hurdle that cannot be overcome through the exercise of due diligence in investigating the vehicle's history and current condition.
