I live in Calgary and don't use the car regularly over the winter either. A few items to consider:
1. Thourough wash and wax job.
2. Interior cleaning and leather conditioning.
3. Engine oil and filter change (a must).
4. Check coolant good to -35 deg C or so. Change as required.
5. Power steering fluid and filter if it needs it (every two years or so?)
6. Brake fluid changeover if required (recommended every two years or so; seem to let this slip myself).
7. Extra air pressure in tires to avoid flat spotting and loss of pressure. Change to old TRX's for storage if you have replaced them with real tires.
8. Fuel stabilizer in tank and run for a bit to get into injection system. Fill tank fully to avoid condensation buildup from freeze/thaw cycle.
9. Cheepo car cover from Canadian Tire if you have a garage. Good quality car cover if you need to leave outside.
10. Check washer fluid is filled with antifreeze style fluid. Intensive cleaner seems to survive.
11. Armourall or prefered equivalent on door gaskets and rubber trim.
12. Lubricate antenna.
I usually run the car about half an hour or more every three weeks or so. This seems to be frequent enough to avoid running down the battery with the clock, flash light, and stuff. If you are going for true hibernation, consider pulling the battery and storing in the basement, or using a Battery Tender charger.
Some folks pull the plugs and squirt some oil in; I don't as I prefer to run the car periodically.
If you think you might have rodent problems, consider a bag or tape over the air intake. Haven't bothered with this myself.
Also, maybe take some time to make a list of small anoying things you want to fix but didn't get around to. Might find time over the winter or take care of in the spring. However, avoid any repairs to plastic parts over the winter due to cracking :-(
