And, if you are not going to show the car for at concourse or other competition, then it only depends on what satisfies you. If it were me, I would do the following:

Remove virtually all interior
Remove all upholstery in trunk
Remove doors and trunk lid
Remove all upholstery from doors and trunk lid
Prep all jambs and openings into interior, well under upholstery and carpeting
Paint all opening jambs, lips and into car
Paint insides and jambs of doors and trunk lid (exterior should be painted after re-install,
along with rest of car)

Remember that black is the most unforgiving of all colors. The body must be block sanded, block sanded, and block sanded again. Final prep and final surface before spraying color must be perfect. Particularly because our cars have large flat surfaces to look down.

The only area left out of this discussion is the engine compartment, but do you really want to pull the engine and all electrical? On this one, I would find out if there is a detail company in your area that will detail the engine compartment and paint it black in the process. Do this part before tackling the color change on the car.

The other option.... Buy a black car.

To get an idea how much work you are taking on, go to a high quality paint shop and ask for a quote, on a color change, in black, with perfect sides on the car.... I'd say $5000 with no body work.
