You need a new idle contol valve. The car shooting up tpo three thousand rpms is normal because you bypassed the idle control valve. The valve contols the amount of airflow necessar to keep the car at a stable idle. After so many years the spring inside the module wears out. The only remedy to your problem is to replace the control valve.
