So, getting the starter on and off is much easier the third time you do it. I used a shorty combination wrench, and it took me under 30 minutes the last time.

I purchased a rebuilt Bosch starter ($82, AutoZone), and it starts fine now. (Well, at least it has 10 or 15 times).

It connects with a rather distinct kachunk, but I think this might be normal.
