I was able to successfully replace my head bolts one at a time about a year and a half ago. If you've never done some of the work, I would just do a couple things at a time, rather than do everything you intend to do at once. I would do the head bolts and adjust the valves and then drive it for a few days. It's just easier to track down anything that does go wrong after a repair (if anything)and you won't be as likely to get in a rush.

Also, if you do replace one bolt at a time, get all the oil out of the bolt hole before replacing the bolt and torqueing, so you don't risk cracking the block. I've used tape head swabs for this on a couple occasions.
