There is a button located on the upper left corner of the seat back on the outboard side as you look at the seat from the back. This button is probably covered by your sheepskins. You'll have to feel around through the sheepskin, depress the release button, and pull the headrest upward. The button is on the same side for both passenger and driver seats.
