there is a temp "sender" and a temp "sensor", The sender is the one-wire peice closest to the hose. This sender is what controls the guage in your dash. The Sensor is the dual-wire thingy farthest to the left in that 3 sensor/sender cluster, it is used by the motronic unit for lots of stuff. In Bentley sec 10, page 5, fig 3-5 & 3-6 show the "sender"; Sec 7, page 4, fig 1-2 shows the "sensor"; fig 4-4 is a better picture, but they are not labeled. Hope this helps!
