do you think he was running essentially a stock suspension set up with OEM MacPherson struts, or maybe coil-overs/spherical ball end joints and typical race gear?

On the racing circuit, few things are as they seem. Remember Herbie, the Love Bug? Bet he wasn't running the 40hp 1200cc engine, either. :<)
