My 85 eta does the same thing. It is the DME computer making adjustments to the fuel mixture for optimum burn. You can disconnect this (there is a plug in the line form the sensoe to the brain near the firewall on the pssenger side of the engine compartment) and the car will accelerate much more smoothly. Fuel mileage will suffer though. I have driven with mine disconnected before but now leave it connected.
