I installed a BB-Tri FLow exhaust and replaced the cat with a custom made by-pass pipe. I have a similar set up described by JakeS whereby I can swap out the new pipe with the cat when emissions are due (every 2 yrs). In my case the noise level is greatly increased much more than I had expected. I didn't notice it at first from inside the car but when I started the car in the garage one day it was real loud so I had someone else drive it around the block and it is much louder and sounds more mechanical without the cats.
