I had the same thing happen to me. Here is what happened and how I fixed it.
Two cables control the throttle bodies. One cable connects to the accelerator pedal and the other to the cruise control unit. The cables are secured by a "plate" located between the last two air horns. If either cable needs to be adjusted, it is done by turning a long plastic "nut" just in front of this plate.
As Sheldon correctly states, the outer cable can seperate from the inner cable. In my case, the cruise control cable was the problem. The outer cable would back out of the adjustment nut and when the accelerator pedal was released, the outer cable hung up on the nut and kept the throttle open causing the engine to run at about 5,000 RPM. Very alarming!
To test if this is happening to you, just slightly pull on each black outer cable at the adjusting nut (with the motor off.) Does the outer cable pull out of the nut? It shouldn't.
My fix to this problem was as follows.
There is a sleeve crimped on the outside of each cable, before the nut. Using some fine stainless steel safety wire, I wired around the crimp and forward to the front of the nut. I did this twice on each cable.
I have never had the problem happen again and as long as the safety wire is there, I don't see how I ever will.
