I am sure you can find an upholstery shop that will cover the regular vinyl/plastic dash in leather that is matched to your interior for a much more reasonable sum. $500? It would look cool, but be more susceptible to UV-cracking and aging. I would not do it in your place. Better a nice vinyl dash than a cracked or dirty leather one.
