Just my opinion here, but $5000-$6000 might be a bit better, $7500 is too high given the mileage and the missing service records. You could be 30,000 miles from an engine rebuild or 1000 miles, no way of knowing.

The cheapest engine rebuild will run you $8000, but most reputable places will charge a heck of a lot more. As posted here many times the tranny can also be very expensive. If those two items fail you on this car or need to be rebuilt your $7500 car becomes a $20,000+ car.

Also taking a car with that kind of mileage to the track is going to entail replacing suspension bushings, shock mounts, diff mounts and a whole host of other things.

Look for a car with less than 140,000 miles and make sure you get all the service records. When buying an M5 getting the right price is less important than getting the right car.
