Using the e28 M5 front calipers, are the stock rotors better or e32 740i rotors? Thanks.

Unless you are planning to take the car to the track, the E32 brakes are fine. They will still warp but not as bad as the stock M5 rotors. the problem with warpage is two fold. First, the aerodynamic engineering of the old girl is just not existant! Coolong air to the rotors was not a priority for the M guys! They did however, drill holes in the "hats" of the stock rotors to cool the wheel bearings! These holes are said to cause turbulence around the surface area of the rotors......causing excessive heat. For a while you could get aluminum "hat" covers to solve that problem. They are hard to find. I have '93 throwing star rims on my M5, but the ugly '91 turbine fan style rims apparently cool the rotors quite well. the e32 rotors by the way are a few mm thinner than the stock rotors. I haven't had any problems.
