Don't want to spend the big bucks rebuilding my 280 yet. So, which would be a better transplant into my e28 M5 and what other parts will I need?

Best to match driveshaft with what ever trans you use.A close-ratio 5-speed is O.K. for track use,but will really keep you busy shifting if you use car daily.
I've recommended trying E28 535i overdrive 260(1986-up) with lower gearing,say a 4.10 for street,up to 4.45 for unreal track acceleration.Drove in an E30 m3 with 4.45;scary fast ontrack.
Put the 4.10 in Jon Van Woerden's M6 daily driver.Woke the car right up ontrack.
