Yes, you physically can use the 7-series rotors on M5 calipers.

However, unless cost is really that big of an issue, it is not recommended. The reason why is because of cooling. The M5 rotors are outside venting, which means they must be cooled from the exterior of the car. If you have turbine-like wheels, e.g. Alpina, Hartge, E34 M5, Radial spoke, or an open spoke design, this allows cool outside air to cool the rotors. The 7-series rotors are inside venting, which means if you will require real brake ducting (not the fake, "oh I have brake ducts in my front spoiler") to efficiently cool. So, if you have the wheels to cool the rotors, use M5 rotors. If you don't, then you could use 750 rotors - though it won't be that much more effective for cooling unless you use real brake ducts.

And there is no real evidence to say that either last longer than the other. I've seen/heard both ways. The problem of warping brakes lays not with using the brakes hard, it's lays with using them correctly. I've seen this with many people at driver's schools and general driving. At least on BMW brakes, if you use the brakes and lean on them for a long period of time, they'll warp the rotors through heat soak - I've warped a set of brake rotors in NJ coast stop&go traffic one summer, and they were the supposedly "unwarpable" ATE Power stops. If you use them hard, and for short periods of time then they won't warp - i.e. correct, hard, and for a short period of time like on track for driver's school. I've never warped a set of rotors on track or at autocrosses.
