Gary Derian, who owns an E34 M5, lapped the disc on the input shaft to make sure it slid on it smoothly. I drove his M5 and his clutch is so light it is like a Honda. The E28 may not be like that when you're done, but I'm sure doing this will improve the action.

I have not looked at M5 clutch components, but be sure to get the pivot, fork, spring, etc., that are in there in addition the the disc, pressure plate and bearing. Maybe the two seals too while you're in there.

Anyone know the best source to replace my clutch? Looking for reasonable price (relative to the fact that it's an M). How hard is it to replace for those who've done it? Most likely will have the mechanic do the work, but may attempt myself based on feedback.
