If you have a large hole in a bolster you can have a shop re-cover just that bolster, and then dye the whole seat.

I ordered drivers seat leather from World Upholstery - about $650. Cost another $250 to have it installed at an upholstery shop.
The color match and fit was perfect.
I am very pleased with the result, but it was very expensive. The only reason I went this way was because the leather was in terrible shape, with a big hole in the bolster. It could not have been rejuvenated with "Leatherique", which I intend to try on the passenger seat - it's in much better shape.
