First, I want to congratulate you for owning a Euro E30. It is a very fine car, when you consider that it is 400 lbs lighter than its US counterpart. I own a 1983 Hartge E30, and like every bit of it.

Then, for the pressure check, you can hook up your gauge at the cold start injector. Pressure has to be taken twice, both at idle. Once with the vaccum hose attached (you will get the lower range value) and one with the vaccum detached but with the pipe plugged at the manifold (higher reading). You do not have to care about engine speed rising with the vaccum hose disconnected (it gets slightly more fuel). I think there is a 6 or 7 lbs difference between higher and lower readings.

When doing the compression test, yes, you have to have someone press the accelerator pedal to open the throttle and let air get in the cylinders. But of course the fuel pump fuse/relay has been disconnected.
