The coolant sensor (a float in the coolant overflow tank) gets crudded up. Take it out, rinse it off well - sometimes that will do it. Otherwise replace it, something like $12.

And if you don't want to do that, clip the two wires and join them together and tape - light will go out. Then you have to monitor the coolant level yourself every couple months like normal people do.
