I replaced the pan gasket on my 87 325 about a month ago. I ran into the same problems as you. I had to remove the nuts on the motor mount bolts ( one on each,under the mount), place a short 2x4 on a hydraulic jack and jack the motor up ( by the motor mount on the passenger side) in order to get enough room to work with the oil pump.
