I've got 18" x 8" wheels with 225/35 ZR 18 tires on them. The offset is +23mm and they don't rub at all with a 2.75" drop and stock fenders. The secret is in the tire size and offset. Don't go any larger in tire size (width or aspect ratio) and stay as close to +25mm as possible.
