I haven't personally seen any upgraded brakes on the E30 M3, not even on club racers. Perhaps it is because the stock brakes are good enough. Usually a good purposeful pad and some brake ducting is enough to run all day on a race track without problems.

Have you seen Tad Laird's car. I believe it is on Gustave's web page www.e30m3performance.com
I can't remember if it's under the "Now Showing" section.
