Since you're going to be using synthetic, I'd say the 10W30 is OK for winter use. I use Mobil 1.

For the rear diff, I use Red Line 75W90, but I've seen a few people using Mobil 1 and they have no problems that I know of. There is a drain plug and a fill plug, make sure you break loose the fill plug before you remove the drain plug, you don't want to be stuck with an empty diff. Replace the drain plug and crush washer (with preferrably new washer) and pump the fluid into the fill plug until it starts to trickle. You're done, replace the plug and washer and enjoy!
The crush washers are available from the dealership and are very cheap, get a bunch for future use.

Next you'll want to replace the trans fluid, Red Line MTL is suitable and there's no crush washers to worry about. It has tapered fittings. You'll need some hex bit sockets to perform both fluid changes, I can't remember the sizes but they're something like 14mm, 10mm, and 17mm? Sears will have them.
