I race and regularly track my E30M3 and occassionally drive it on the street. Here is what I do:

Engine Oil - 5w50 Synthetic. I run to the normal fill level (4.6qts) for street driving. Add 1/2 to 3/4 over level for racing or on-track driving schools. Changed before every track event. Change the filter every other time. If you track the car, add an oil pan baffle kit before going on track.

Diff - Redline 75/90 synthetic

Transmission - Redline MTL

Coolant - depends on your local weather. Antifreeze does not conduct heat as well as water, so if you live in the south, like I do, or track your car, then you will run less than a 50% mix. If you live up north, run a 50% mix. I run about a 25% mix of antifreeze, and have added a bottle of Redline water wetter to it.

Brake Fluid - Ford Heavy Duty DOT 3, changed before every race or track event. For street driving just about anything should work, change once a year. If you track the car, consider brake cooling ducts - not necessary for the street though.

Power Steering - I've left it alone.
