I had the same problem, and I asked the same question on the E30 SIG list about a year ago. The answer, from Jim C himself, was to put the STOCK chip BACK in and then set the CO and idle settings. Then put the chip back in.
While that helped mine alot, It didn't compeltely solve it. However, ever sense I put in a better Ignition coil (a Crane unti) and switched back to the original plugs (not the colder ones from Turner), the soot has almost disappeared. And this is for a car that is used for short trips (doesn't really get fully warmed up until I'm at the destination). The hotter the spark, the less carbon is left.
So those are some things to look into.

I know alot of people get black crap on the back of their cars, but this seems like a lot. I washed my car 1 week ago, and It's already nasty.
