Moderate vacuum leaks can sound like a hissing noise. They also cause the engine to stumble and run like crap, especially at idle. It's possible a hose has cracked or something popped off. Check your crankcase breather hoses, as these become very stiff and brittle with age. Also check your brake booster hose and the fitting in the #4 intake runner, the idle control air circuit, and the 4 rubber nipple covers on the throttles.

Adrian suggested to check the exhaust manifold nuts on the engine. If this is the culprit, the noise will be a ticking sound, fairly noisy under the hood.

Yes, Exhaust manifold nuts are a problem.
I have to tighten my up every 3 months or so.

It does make a horrendeous noise too.
