i think you will find the ? was refering to the head of the valve not the size of the valve stem. stock valves are 37mm int ,32mm ex. 7mm stem size

and the Evo 2.5 head has larger ports to match the larger throttles and valve's so the seats that are in the head are appropriately larger to match the valve size and not restrict the end if the intake port!
and no the guide's are not an integral part of the head (for one they are made of brass not aluminum like the head).they are pressed into the head after the head is heated to 300 deg F and the guides are chilled in liquid nitrogen . then they practically fall in . and are then reamed to size

Yes valves and TB's are different - as are the valve seats. But contrary to popular belief the valve guides are an integral part of the head. BMW sell valves with oversize valve stems when the guides are worn.

Some might fit new guides - fine, but Motorsport supply the "oversize stem" valves.
